Ingredients

  • 1 (297 g) jar red pepper jelly
  • 1 (255 g) jar mustard
  • 2 lbs (907 g) beef smoked sausage or beef kielbasa

Instructions

  1. Set a 6-quart slow cooker to a low setting and combine the pepper jelly with the mustard in it.
  2. Mix the ingredients a few times until the jelly dissolves into the mustard.
  3. Slice the sausages into small pieces suitable for eating with a toothpick.
  4. Place the sausage pieces into the slow cooker, ensuring they are well-coated with the sauce.
  5. Allow the mixture to cook on low for three hours, giving it a stir now and then.
  6. To thicken the glaze, you can remove the lid from the slow cooker towards the end of the cooking time.
  7. The sausages can remain warm in the slow cooker for several hours if needed.
  8. Alternatively, you can prepare this in a Dutch oven by melting the jelly and mustard together over low heat, then adding the sausages and stirring them into the glaze.
  9. Cook with the lid partially open to let steam escape, for one hour, stirring occasionally.

Notes

  • Try using spicy red pepper jelly for a kick in flavor.
  • Experiment with Dijon or whole grain mustard for a different taste.
  • For a thicker glaze, add a cornstarch slurry towards the end of cooking.
