Description

A quick and satisfying dish of peanut noodles layered with a rich peanut sauce, perfect for weeknight dinners or gatherings.


Ingredients

  • 16 oz pasta (spaghetti or rice noodles)
  • 1 cup natural peanut butter (unsweetened)
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1/4 cup brown sugar
  • 2 teaspoons chili garlic sauce (more or less to taste)
  • 2 tablespoons fresh lime juice
  • 3 garlic cloves (pressed or grated)
  • 1 tablespoon ginger root (grated)
  • 3 green onions (sliced)
  • 1 tablespoon sesame seeds
  • 1/4 cup salted peanuts (roughly chopped)


Instructions

  1. Begin cooking the pasta according to package instructions. Remember to reserve one cup of the pasta water before draining.
  2. While the pasta cooks, combine peanut butter, soy sauce, rice vinegar, brown sugar, chili garlic sauce, lime juice, garlic, and ginger in a bowl. Whisk everything until well combined to form the peanut sauce.
  3. After draining the pasta, add the peanut sauce directly onto the noodles. Stir well, and gradually add the reserved pasta water, adjusting the consistency as needed.
  4. Serve garnished with green onions, sesame seeds, and crushed peanuts for extra flavor and texture.

Notes

Leftovers taste fantastic, so make a larger batch if you can. The flavors continue to meld and deepen over time.
