A delightful twist on classic meatloaf, blending the textures of traditional meatloaf with vibrant taco flavors, bringing families together at the dinner table.
Ingredients
- 1 pound lean ground beef
- 1 cup crushed tortilla chips
- 1 packet taco seasoning
- 1/2 cup shredded pepper Jack cheese
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1/4 cup salsa
- 1/4 cup taco sauce
- 1 egg
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Combine ground beef, crushed tortilla chips, taco seasoning, shredded pepper Jack cheese, diced onion, diced bell pepper, salsa, egg, salt, and pepper in a large bowl. Mix until well combined.
- Transfer the mixture into a greased loaf pan and shape it into a loaf.
- Pour taco sauce over the top of the meatloaf.
- Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 160°F (70°C).
- Let it rest for a few minutes before slicing.
- Serve hot with your choice of sides.
