- 1/2 cup (120 ml) spinach pesto
- 8 oz. (225 g) shredded beef
- 1 cup (240 ml) halved grape tomatoes
- 1/2 cup (120 ml) thinly sliced red onion
- 25 oz. (65 g) can sliced green olives
- 1 cup (240 ml) quartered artichoke hearts
- 1/2 cup (120 ml) crumbled feta
- 1 teaspoon (5 ml) dried oregano
- Salt
- fresh chopped parsley
- fresh arugula leaves
Instructions
- Set your oven to 500°F (260°C) to preheat.
- Prepare your own flatbread using a simple recipe and partially bake it as directed, or opt for two ready-made flatbread crusts.
- Coat both crusts with a layer of olive oil.
- Spread the spinach pesto evenly over the surfaces of the crusts.
- Sprinkle the shredded beef over the two crusts.
- Top with grape tomatoes, red onion slices, green olives, artichoke hearts, crumbled feta, and a dash of dried oregano, adding a sprinkle of salt to taste.
- Place in the oven and cook for 5-10 minutes until the vegetables are cooked through and the beef is warm.
