Ingredients

  • 2 flatbread crusts (homemade or storebought)
  • 2 tablespoons (30 ml) olive oil
  • 1/2 cup (120 ml) spinach pesto
  • 8 oz. (225 g) shredded beef
  • 1 cup (240 ml) halved grape tomatoes
  • 1/2 cup (120 ml) thinly sliced red onion
  • 25 oz. (65 g) can sliced green olives
  • 1 cup (240 ml) quartered artichoke hearts
  • 1/2 cup (120 ml) crumbled feta
  • 1 teaspoon (5 ml) dried oregano
  • Salt
  • fresh chopped parsley
  • fresh arugula leaves


Instructions

  1. Set your oven to 500°F (260°C) to preheat.
  2. Prepare your own flatbread using a simple recipe and partially bake it as directed, or opt for two ready-made flatbread crusts.
  3. Coat both crusts with a layer of olive oil.
  4. Spread the spinach pesto evenly over the surfaces of the crusts.
  5. Sprinkle the shredded beef over the two crusts.
  6. Top with grape tomatoes, red onion slices, green olives, artichoke hearts, crumbled feta, and a dash of dried oregano, adding a sprinkle of salt to taste.
  7. Place in the oven and cook for 5-10 minutes until the vegetables are cooked through and the beef is warm.
