Ingredients
- 2 cups cooked chicken, shredded (about 300g)
- 1 cup broccoli florets (about 150g)
- 1 cup cauliflower florets (about 150g)
- 1 cup shredded cheddar cheese (about 100g)
- 1/2 cup plain yogurt (about 120g)
- 1/2 cup tahini (about 120g)
- 1/4 cup nutritional yeast (about 25g)
- 1 teaspoon garlic powder (about 5g)
- 1 teaspoon onion powder (about 5g)
- 1/2 teaspoon salt (about 2g)
- 1/4 teaspoon ground cumin (about 1g)
- 1 tablespoon olive oil (about 15ml)
Instructions
- Preheat the oven to 375°F (190°C).
- Lightly grease a 9×13-inch baking dish with olive oil.
- Steam the broccoli and cauliflower florets until tender, about 5 minutes.
- In a large bowl, combine shredded chicken, broccoli, and cauliflower.
- In another bowl, mix sour cream, mayonnaise, garlic powder, onion powder, salt, and black pepper.
- Add the sour cream mixture to the chicken and vegetables, stirring until well combined.
- Transfer the mixture to the prepared baking dish.
- Sprinkle shredded cheddar cheese evenly over the top.
- Sprinkle grated Parmesan cheese over the cheddar cheese.
- Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
