A vibrant and flavorful casserole combining ground beef, bell pepper, tortillas, salsa, and cheese, perfect for family dinners.
Ingredients
- 1 lb lean ground beef
- 1 red bell pepper, chopped
- ½ medium onion, finely chopped
- 3 tsp taco seasoning
- 1 tsp dried oregano
- 2 cloves garlic, minced
- ½ tsp salt
- 2 cups jarred tomato salsa
- 1 can black beans (19 oz), rinsed and drained
- 6 large tortillas
- 3 cups shredded cheddar cheese
Instructions
- Heat your skillet over medium-high heat. Cook the ground beef with chopped bell pepper and onion until the beef browns and vegetables become tender.
- Stir in taco seasoning, oregano, garlic, and salt. Cook for 1 minute until fragrant.
- Pour in the salsa and add the rinsed black beans. Mix thoroughly, then remove from heat.
- Grab a 9×13-inch baking dish and layer two large tortillas at the bottom. Spread one-third of the beef mixture over them, followed by one-third of the shredded cheese.
- Repeat the layering process two more times until all ingredients are used.
- Bake for 15–20 minutes, or until heated through and cheese melts and bubbles.
- Let the casserole cool slightly before slicing into servings.
Notes
For extra flavor, consider adding diced jalapeños or a spicier salsa. Fresh herbs like cilantro can brighten the dish before serving.
