Description

A vibrant and flavorful casserole combining ground beef, bell pepper, tortillas, salsa, and cheese, perfect for family dinners.


Ingredients

  • 1 lb lean ground beef
  • 1 red bell pepper, chopped
  • ½ medium onion, finely chopped
  • 3 tsp taco seasoning
  • 1 tsp dried oregano
  • 2 cloves garlic, minced
  • ½ tsp salt
  • 2 cups jarred tomato salsa
  • 1 can black beans (19 oz), rinsed and drained
  • 6 large tortillas
  • 3 cups shredded cheddar cheese


Instructions

  1. Heat your skillet over medium-high heat. Cook the ground beef with chopped bell pepper and onion until the beef browns and vegetables become tender.
  2. Stir in taco seasoning, oregano, garlic, and salt. Cook for 1 minute until fragrant.
  3. Pour in the salsa and add the rinsed black beans. Mix thoroughly, then remove from heat.
  4. Grab a 9×13-inch baking dish and layer two large tortillas at the bottom. Spread one-third of the beef mixture over them, followed by one-third of the shredded cheese.
  5. Repeat the layering process two more times until all ingredients are used.
  6. Bake for 15–20 minutes, or until heated through and cheese melts and bubbles.
  7. Let the casserole cool slightly before slicing into servings.

Notes

For extra flavor, consider adding diced jalapeños or a spicier salsa. Fresh herbs like cilantro can brighten the dish before serving.
