Ingredients

  • 8 ounces (227g) shrimp, peeled + de-veined
  • 2 teaspoons (10 ml) old bay seasoning
  • 3 tablespoons (45 ml) olive oil
  • 1/2 medium yellow onion, diced
  • 1 medium red bell pepper, diced
  • 1/2 medium green bell pepper, diced
  • 12 ounces (340g) beef sausage, chopped
  • 1 medium zucchini, chopped
  • 2 teaspoons (10 ml) fresh garlic, diced
  • ¼ cup (60ml) chicken stock
  • Salt and pepper to taste
  • 1/2 teaspoon (3 ml) crushed red pepper flakes
  • 3 tablespoons (45 ml) fresh parsley, chopped


Instructions

  1. Prepare all of your ingredients in advance.
  2. Coat the shrimp with the old bay seasoning in a mixing bowl.
  3. Heat olive oil in a skillet over medium-high heat. Add the shrimp and cook for about 3-4 minutes per side. Once done, take them out and set aside.
  4. In the same skillet, sauté the onion, red bell pepper, and green bell pepper for 2-3 minutes or until they become translucent.
  5. Add the sausage and zucchini to the skillet with the onion and peppers. Cook for another 2-3 minutes until the sausage is fully cooked.
  6. Return the shrimp to the skillet along with the garlic. Stir everything together for 1-2 minutes.
  7. Pour in the chicken stock and mix thoroughly to combine all the ingredients.
  8. Season the mixture with crushed red pepper flakes, salt, and pepper. Turn off the heat and garnish with fresh parsley before serving.
