Ingredients
- 8 ounces (227g) shrimp, peeled + de-veined
- 2 teaspoons (10 ml) old bay seasoning
- 3 tablespoons (45 ml) olive oil
- 1/2 medium yellow onion, diced
- 1 medium red bell pepper, diced
- 1/2 medium green bell pepper, diced
- 12 ounces (340g) beef sausage, chopped
- 1 medium zucchini, chopped
- 2 teaspoons (10 ml) fresh garlic, diced
- ¼ cup (60ml) chicken stock
- Salt and pepper to taste
- 1/2 teaspoon (3 ml) crushed red pepper flakes
- 3 tablespoons (45 ml) fresh parsley, chopped
Instructions
- Prepare all of your ingredients in advance.
- Coat the shrimp with the old bay seasoning in a mixing bowl.
- Heat olive oil in a skillet over medium-high heat. Add the shrimp and cook for about 3-4 minutes per side. Once done, take them out and set aside.
- In the same skillet, sauté the onion, red bell pepper, and green bell pepper for 2-3 minutes or until they become translucent.
- Add the sausage and zucchini to the skillet with the onion and peppers. Cook for another 2-3 minutes until the sausage is fully cooked.
- Return the shrimp to the skillet along with the garlic. Stir everything together for 1-2 minutes.
- Pour in the chicken stock and mix thoroughly to combine all the ingredients.
- Season the mixture with crushed red pepper flakes, salt, and pepper. Turn off the heat and garnish with fresh parsley before serving.
