Ingredients

  • – 2 medium zucchini (300g), trimmed and sliced
  • – 1 bell pepper (150g), thinly sliced
  • – 1 small red onion (100g), cut into thin slices
  • – vegetable oil
  • – 1/2 cup (120ml) hummus
  • – 1/4 cup (60ml) black olives, sliced
  • – 1/4 cup (60g) tofu feta cheese, crumbled, optional
  • – 1/2 head of romaine lettuce (150g), other leafy greens work as well!
  • – 4 large tortilla wraps


Instructions

  1. Begin by preheating the grill or a grill pan to a medium-high setting.
  2. If not already prepared, slice the vegetables. Coat them with vegetable oil, and season with salt and pepper.
  3. Place the seasoned vegetables onto the grill and cook for approximately 10 minutes, turning them over halfway through. Continue until they are lightly charred, then remove them from the grill.
  4. For an extra touch, you can briefly grill the tortilla wraps for about one minute on each side.
  5. To assemble, lay the tortillas flat on a surface. Evenly distribute the hummus across all the tortillas. Layer with romaine lettuce, black olives, and tofu feta cheese, if using. Finally, add the grilled vegetables, dividing them equally among the wraps. Roll them up tightly and savor the flavors!
