Ingredients

  • 4 medium yellow squash (about 600g)
  • 3 tablespoons olive oil (45 ml)
  • 60 g grated cheese
  • 1/2 teaspoon (3 ml) salt
  • 1/2 teaspoon (3 ml) pepper
  • 1 teaspoon (5 ml) red pepper flakes, optional
  • Fresh thyme or parsley to garnish, optional


Instructions

  1. Set your oven to 400°F and adjust the rack to the center.
  2. Slice the yellow squash into triangular pieces by angling your cuts at 45 degrees, or alternatively, slice them into half-inch circles. Remove the ends and place the pieces in a 9×13-inch baking dish without greasing it, as oil will be added shortly.
  3. Pour olive oil over the squash pieces. Next, sprinkle them with grated cheese, salt, pepper, and, if preferred, red pepper flakes. Use your hands or a large spoon to thoroughly coat each squash piece with the mixture.
  4. Put the dish in the oven and bake for 10 to 12 minutes until the squash starts to soften. Switch your oven to the broil setting on HIGH and broil for 3 to 5 minutes. Keep an eye on them to avoid burning, as the time may vary with different ovens.
  5. When the squash turns golden and begins to crisp, take them out of the oven. If you like, add a garnish of fresh thyme or parsley. Serve right away and enjoy!

Notes

  • For a richer taste, try mixing parmesan, mozzarella, or cheddar cheese.
  • Experiment with rosemary, basil, or oregano for a unique flavor twist.
  • To add more spice, increase red pepper flakes or add a pinch of cayenne pepper.
