Description

A comforting dish combining frozen meatballs and fresh vegetables, slow-cooked to perfection.


Ingredients

  • 1 (26oz) bag frozen meatballs
  • 2 cups baby carrots
  • 5 stalks celery, chopped
  • 2 packets brown gravy mix
  • 1 packet Lipton onion soup mix
  • 2 cups water
  • ¼ cup butter
  • 1 (24oz) container refrigerated mashed potatoes


Instructions

  1. Place the frozen meatballs, baby carrots, and chopped celery into your slow cooker.
  2. In a small bowl, whisk together the two packets of brown gravy mix with the two cups of water.
  3. Pour the gravy mixture over the meatballs and veggies.
  4. Sprinkle the packet of onion soup mix over the top.
  5. Slice the butter into small pieces and distribute them evenly on top.
  6. Cook on LOW for 180-240 minutes, stirring halfway through.
  7. Just before serving, heat up and prepare the mashed potatoes according to the package instructions.

Notes

For a thicker gravy, consider adding a cornstarch slurry during the last 30 minutes of cooking. Adjust cooking time based on your slow cooker.
