Description

Nutritious and fluffy egg bites packed with protein, perfect for busy mornings or as a snack.


Ingredients

  • 8 eggs
  • 1/2 cup half-and-half or milk
  • 1/4 cup diced green pepper
  • 1/4 cup green onions
  • 1/4 cup chopped spinach
  • 3/4 cup diced ham or bacon (cooked), divided
  • 3/4 cup shredded cheddar cheese, divided
  • 1/4 tsp salt
  • 1/8 tsp pepper


Instructions

  1. Preheat the oven to 350°F and grease muffin tins or silicone muffin cups.
  2. In a medium-sized mixing bowl, whisk together the eggs, half-and-half or milk, salt, pepper, and half of the shredded cheddar cheese.
  3. Pour the egg mixture equally into the prepared muffin cups.
  4. Sprinkle the remaining bacon and cheddar cheese on top.
  5. Bake for 18-20 minutes, checking for doneness at 18 minutes.
  6. Remove from oven and let cool slightly before serving.
