Description

A flavorful and satisfying quesadilla filled with shredded chicken, crispy bacon, and creamy ranch dressing, all wrapped in a golden tortilla.


Ingredients

  • 4 large flour tortillas
  • 2 cups cooked chicken (shredded)
  • 8 slices bacon (cooked and crumbled)
  • 2 cups Mexican cheese blend (shredded)
  • 1/2 cup ranch dressing
  • 1 cup tomatoes (diced)
  • 1/4 cup red onion (finely chopped)
  • 2 tbsp fresh cilantro (chopped)
  • 2 tbsp butter (for cooking)


Instructions

  1. Mix the shredded chicken with ranch dressing until evenly coated.
  2. Add the crumbled bacon, diced tomatoes, finely chopped onion, and cilantro to the chicken mixture. Stir to combine thoroughly.
  3. Lay out one flour tortilla and sprinkle a layer of Mexican cheese blend across one half.
  4. Spoon a generous amount of the chicken mixture over the cheese, then sprinkle more cheese on top.
  5. Fold the tortilla in half, pressing gently to compact the filling.
  6. Heat 2 tablespoons of butter in a skillet over medium heat.
  7. Carefully place the quesadilla in the skillet. Cook for 2-3 minutes per side until golden brown and crispy.
  8. Repeat the process with the remaining tortillas and fillings.

Notes

Preheat the skillet thoroughly before adding the quesadilla for a crispy outcome. Don’t overcrowd the pan, and consider using a mix of cheeses for an even better texture.
