- Place the zucchini cubes in a pot of boiling water and let them cook for 3 minutes. Drain and allow them to cool down.
- In a mixing bowl, blend the cooled zucchini with mayonnaise, shredded cheddar, eggs, pepper, and garlic powder until well combined.
- Transfer this mixture into a greased baking dish with a capacity of 1 1/2 quarts.
- In another bowl, mix the Panko breadcrumbs with the melted butter. Spread this mixture evenly over the casserole.
