  • 1cup (240 ml) Shredded Cheddar Cheese
  • 2 Eggs, slightly beaten
  • 1tsp (5 ml) Pepper
  • 3/4 – 1tsp (5 ml) Garlic Powder
  • 1/4cup (60 ml) Panko Breadcrumbs
  • 1Tbsp (15 ml) Butter, melted

Instructions

  1. Place the zucchini cubes in a pot of boiling water and let them cook for 3 minutes. Drain and allow them to cool down.
  2. In a mixing bowl, blend the cooled zucchini with mayonnaise, shredded cheddar, eggs, pepper, and garlic powder until well combined.
  3. Transfer this mixture into a greased baking dish with a capacity of 1 1/2 quarts.
  4. In another bowl, mix the Panko breadcrumbs with the melted butter. Spread this mixture evenly over the casserole.
  5. Bake the dish uncovered at 350°F for 35 minutes, or until the zucchini can be easily pierced with a fork.
