Ingredients
- 1 lb (454 g) ground beef
- 2 cans (284 g each) red enchilada sauce
- 8 oz (227 g) shredded Mexican blend cheese
- 8 oz (227 g) shredded cheddar cheese
- 12 flour tortillas (6 inch/15 cm)
Instructions
- Preheat the oven to 375°F (190°C). Cook the ground beef in a skillet until it’s fully browned, then remove any excess fat.
- Combine 3/4 cup of the enchilada sauce with one cup of cheese into the beef mixture.
- Distribute the beef mixture evenly across the tortillas, roll them up, and position them seam-side down in a baking dish that’s been lightly coated with oil.
- Drizzle the rest of the enchilada sauce over the tortillas and sprinkle the remaining cheese on top.
- Place the dish in the oven and bake for 15 to 20 minutes, or until the cheese is bubbly and melted.
- Pair with yellow rice and refried beans when serving.
- Add a dollop of sour cream, spoonfuls of salsa, and some lettuce for garnish.
