Ingredients
- 2 medium-sized yellow squash
- Garlic salt & freshly ground black pepper, to taste
- 1/2 cup (50g) freshly grated cheese (use a halal-friendly alternative)
Instructions
- Position the oven rack in the middle section. Heat the oven to 425°F. Cover a baking tray with parchment paper or use foil with a light spray of nonstick cooking oil.
- Rinse and pat dry the yellow squash, then slice them into ¼-inch thick rounds. Lay the squash slices on the prepared tray without much gap between them.
- Evenly dust the squash with garlic salt and ground black pepper. Take a small spoon and layer each squash slice with a thin coat of grated cheese.
- Bake for 15 to 20 minutes, until the cheese melts and becomes a light golden hue. (Monitor them closely the first time and remove from the oven early if the cheese turns golden before 15 minutes. Alternatively, you can broil them for a minute or two at the end for faster browning.) Serve right away.
