Ingredients
- 5 Persian cucumbers
- 1/2 tsp (2.5 ml) salt
- 1/2 tbsp (7.5 ml) vegetable oil
- 3/4 tbsp (11.25 ml) soy sauce
- 1/2-1 tbsp (7.5-15 ml) sugar (see notes)
- 3/4 tbsp (11.25 ml) rice vinegar
- 1 tbsp (15 ml) chili oil
- 1/2 tbsp (7.5 ml) sesame seeds
- 1/2 tbsp (7.5 ml) minced garlic (optional)
Instructions
- Wash the cucumbers and cut one end diagonally.
- Continue cutting diagonally to create more oval than circular pieces, adjusting thickness as desired.
- Place the slices in a bowl and lightly sprinkle with salt.
- Toss them thoroughly and chill in the fridge for a minimum of 20 minutes to extract moisture.
- Pour out the liquid and quickly rinse the cucumber slices for 10 seconds before putting them back into the bowl.
- Incorporate vegetable oil, soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and garlic into the cucumbers.
- Mix everything together until fully blended and serve. Enjoy your dish!
