Ingredients

  • 5 Persian cucumbers
  • 1/2 tsp (2.5 ml) salt
  • 1/2 tbsp (7.5 ml) vegetable oil
  • 3/4 tbsp (11.25 ml) soy sauce
  • 1/2-1 tbsp (7.5-15 ml) sugar (see notes)
  • 3/4 tbsp (11.25 ml) rice vinegar
  • 1 tbsp (15 ml) chili oil
  • 1/2 tbsp (7.5 ml) sesame seeds
  • 1/2 tbsp (7.5 ml) minced garlic (optional)


Instructions

  1. Wash the cucumbers and cut one end diagonally.
  2. Continue cutting diagonally to create more oval than circular pieces, adjusting thickness as desired.
  3. Place the slices in a bowl and lightly sprinkle with salt.
  4. Toss them thoroughly and chill in the fridge for a minimum of 20 minutes to extract moisture.
  5. Pour out the liquid and quickly rinse the cucumber slices for 10 seconds before putting them back into the bowl.
  6. Incorporate vegetable oil, soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and garlic into the cucumbers.
  7. Mix everything together until fully blended and serve. Enjoy your dish!
