Description
A refreshing and simple Asian cucumber salad with a savory dressing, perfect as a side dish.
Ingredients
- 5 Persian cucumbers
- 1/2 tsp salt
- 1/2 tbsp sesame oil
- 3/4 tbsp light soy sauce
- 1/2-1 tbsp sugar (adjust according to taste)
- 3/4 tbsp rice vinegar
- 1 tbsp chili oil
- 1/2 tbsp sesame seeds
- 1/2 tbsp garlic, minced (optional)
Instructions
- Rinse the cucumbers and slice one end at an angle.
- Continue carving at an angle, creating oval slices. Adjust the thickness based on your preference.
- Place the cucumber slices in a bowl or container and sprinkle with 1/2 tsp of salt.
- Mix well and refrigerate the cucumbers for at least 20 minutes to draw out the water.
- After 20 minutes, drain the water and rinse the cucumbers for 10 seconds before returning them to the bowl.
- Add sesame oil, light soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and minced garlic (if using).
- Stir until all ingredients are well combined and serve.
Notes
For extra crunch, consider adding vegetables like carrots or bell peppers. Adjust the sugar according to your taste for a sweeter or tangy flavor.
