Ingredients
- – 2 large zucchini (500g)
- – 1 tablespoon olive oil (15ml)
- – 1/2 teaspoon (3 ml) salt or less if desired
- – 1/4 teaspoon (1 ml) red pepper flakes
- – 1/4 teaspoon (1 ml) ground black pepper
- – 1/3 cup (80 ml) to 1/2 cup (120 ml) grated cheese
Instructions
- Rinse the zucchini, dry them with a towel, and cut them into discs that are ½-inch thick. (Avoid cutting them too thin as they could become soggy, while cutting them too thick might result in them being undercooked before the cheese browns.)
- In a big bowl, combine the zucchini slices with olive oil, salt, red pepper flakes, and ground black pepper. Toss everything together until the zucchini is evenly coated.
- Set the air fryer to 400°F and allow it to preheat for 11 minutes. Once ready, arrange the zucchini slices in a single layer, making sure to sprinkle grated cheese over each slice. Tip: Ensure that all the cheese lands on the zucchini slices.
- Fry until the tops turn a golden brown color, which should take about 9 to 11 minutes. Enjoy while hot!
