Description

Ingredients

  • – 2 large zucchini (500g)
  • – 1 tablespoon olive oil (15ml)
  • – 1/2 teaspoon (3 ml) salt or less if desired
  • – 1/4 teaspoon (1 ml) red pepper flakes
  • – 1/4 teaspoon (1 ml) ground black pepper
  • – 1/3 cup (80 ml) to 1/2 cup (120 ml) grated cheese


Instructions

  1. Rinse the zucchini, dry them with a towel, and cut them into discs that are ½-inch thick. (Avoid cutting them too thin as they could become soggy, while cutting them too thick might result in them being undercooked before the cheese browns.)
  2. In a big bowl, combine the zucchini slices with olive oil, salt, red pepper flakes, and ground black pepper. Toss everything together until the zucchini is evenly coated.
  3. Set the air fryer to 400°F and allow it to preheat for 11 minutes. Once ready, arrange the zucchini slices in a single layer, making sure to sprinkle grated cheese over each slice. Tip: Ensure that all the cheese lands on the zucchini slices.
  4. Fry until the tops turn a golden brown color, which should take about 9 to 11 minutes. Enjoy while hot!
