Ingredients

  • Cooking spray
  • 1 (14-oz.) package puff pastry, thawed if frozen
  • 1 (8-oz.) block cold cream cheese
  • 1/2 c. pepper jelly
  • Fresh thyme leaves, for serving (optional )


Instructions

  1. Heat your oven to 375°F. Lightly coat two mini muffin trays with cooking spray. Roll out the puff pastry on a clean surface and cut it into 24 equal squares, then place each square into the greased muffin cups.
  2. Bake the pastry squares until they are just starting to turn golden and have puffed up, approximately 12 minutes. Allow them to cool for a short time.
  3. Slice the cream cheese block into 24 sections. Insert one piece of cream cheese into the center of each puff pastry, gently pulling apart the pastry in the middle if necessary. Add about a heaping teaspoon of pepper jelly on top of each one.
  4. Return the bites to the oven and continue baking until the pastry is a rich golden color and the cream cheese has heated through, about 8 to 10 more minutes. Sprinkle with thyme leaves if you wish. Allow them to cool for 10 minutes before enjoying.

Notes

  • Let the cream cheese block sit at room temperature for 30 minutes for a creamier texture.
  • Experiment with different flavors of jelly or jam like raspberry or apricot for a unique twist.
