Ingredients

  • 1 cup (240 ml) self-rising flour
  • 3/4 cup (180 ml) granulated sugar, (plus 2 additional Tablespoon s for topping)
  • 1/2 cup (120 ml) vegetable oil, divided (and melted separately)
  • 1 (29 ounce (822 g)) can sliced peaches in heavy syrup, undrained


Instructions

  1. Set your oven to heat at 350 degrees Fahrenheit.
  2. In a medium-sized bowl, combine the self-rising flour, 3/4 cup of the granulated sugar, and half of the vegetable oil, which should be melted beforehand. Optionally, you can sprinkle a bit of cinnamon if desired.
  3. Scatter about one-third of this mixture onto the base of a 9×9-inch baking dish. During the cooking process, this will mingle with the peach syrup and help thicken it.
  4. Pour the peaches along with their syrup into the baking dish. If you prefer a less moist cobbler, you can choose not to include all the liquid.
  5. Evenly distribute the remaining flour and sugar blend over the peaches. Sprinkle the last 2 tablespoons of sugar on top. Drizzle the rest of the unmelted vegetable oil over the mixture. It may appear quite liquidy, but don’t worry, the flour will absorb it.
  6. Place in the oven and bake for 40 to 45 minutes, or until the top becomes a golden brown with bubbles. Allow the cobbler to rest for at least 5 minutes before serving.
  7. Enjoy it with a dollop of vanilla ice cream.
  8. You can easily make a larger batch by using a 9×13-inch baking dish.
