Ingredients

  • 2 tablespoons unsalted butter
  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 4 ounces cream cheese
  • 1/4 cup heavy whipping cream
  • 1 cup shredded cheddar cheese
  • 4 pieces low-carb tortillas
  • 1 cup sour cream
  • 1 cup lettuce (chopped)
  • 1 medium tomato (diced)
  • 1 cup extra cheddar cheese
  • 1/4 cup cilantro (chopped)
  • 1/2 cup jalapeño slices (optional)
  • 1 tablespoon olive oil


Instructions

  1. Melt the butter in a skillet over medium heat. Once melted, add the ground beef and cook until browned. Drain any excess fat if needed.
  2. Stir in the taco seasoning until fully incorporated, allowing aromas to fill the air.
  3. Combine cream cheese, heavy whipping cream, and shredded cheddar cheese in another pan over low heat to create a creamy cheese sauce. Stir continuously until melted and smooth.
  4. Warm a low-carb tortilla in the skillet for a few seconds. Place a generous portion of the spicy beef mixture on one half of the tortilla.
  5. Pour the cheese sauce over the beef, adding sour cream, lettuce, diced tomato, cilantro, and jalapeño slices if desired.

Notes
