Ingredients
- 2 medium spaghetti squash
- 2 tablespoons olive oil (30 ml)
- 1 teaspoon salt (5 g)
- 1/2 teaspoon black pepper (1 g)
- 1 cup marinara sauce (240 ml)
- 1 cup ricotta cheese (250 g)
- 1 cup shredded mozzarella cheese (100 g)
- 1/4 cup grated alternative cheese (25 g)
- 1 teaspoon dried Italian seasoning (2 g)
- 2 cloves garlic, minced
- 1/2 cup chopped fresh basil (20 g)
- 1/4 cup chopped fresh parsley (15 g)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut each spaghetti squash in half lengthwise and remove the seeds.
- Drizzle the cut sides of the squash with olive oil.
- Sprinkle with salt and black pepper.
- Place the squash halves cut side down on a baking sheet.
- Roast in the oven for 40-45 minutes or until tender.
- Remove the squash from the oven and let it cool slightly.
- Use a fork to scrape the inside of the squash into strands.
- Reduce the oven temperature to 375°F (190°C).
- In a mixing bowl, combine the marinara sauce and minced garlic.
- In another bowl, mix ricotta cheese with Italian seasoning.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Add a layer of spaghetti squash strands over the sauce.
- Spread half of the ricotta mixture over the squash.
- Sprinkle half of the mozzarella and Parmesan cheese on top.
- Repeat the layers with the remaining ingredients.
- Bake in the oven for 20-25 minutes until the cheese is bubbly and golden.
- Remove from the oven and let it cool for 5 minutes.
- Garnish with chopped fresh basil and parsley before serving.
Notes
- Mix ricotta cheese with a splash of milk or cream for a creamier texture before layering.
- Experiment with goat cheese or fontina for a unique flavor profile.
- Sprinkle red pepper flakes on top before baking for a kick of heat.
