Ingredients

  • 2 medium spaghetti squash
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon salt (5 g)
  • 1/2 teaspoon black pepper (1 g)
  • 1 cup marinara sauce (240 ml)
  • 1 cup ricotta cheese (250 g)
  • 1 cup shredded mozzarella cheese (100 g)
  • 1/4 cup grated alternative cheese (25 g)
  • 1 teaspoon dried Italian seasoning (2 g)
  • 2 cloves garlic, minced
  • 1/2 cup chopped fresh basil (20 g)
  • 1/4 cup chopped fresh parsley (15 g)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut each spaghetti squash in half lengthwise and remove the seeds.
  3. Drizzle the cut sides of the squash with olive oil.
  4. Sprinkle with salt and black pepper.
  5. Place the squash halves cut side down on a baking sheet.
  6. Roast in the oven for 40-45 minutes or until tender.
  7. Remove the squash from the oven and let it cool slightly.
  8. Use a fork to scrape the inside of the squash into strands.
  9. Reduce the oven temperature to 375°F (190°C).
  10. In a mixing bowl, combine the marinara sauce and minced garlic.
  11. In another bowl, mix ricotta cheese with Italian seasoning.
  12. Spread a layer of marinara sauce on the bottom of a baking dish.
  13. Add a layer of spaghetti squash strands over the sauce.
  14. Spread half of the ricotta mixture over the squash.
  15. Sprinkle half of the mozzarella and Parmesan cheese on top.
  16. Repeat the layers with the remaining ingredients.
  17. Bake in the oven for 20-25 minutes until the cheese is bubbly and golden.
  18. Remove from the oven and let it cool for 5 minutes.
  19. Garnish with chopped fresh basil and parsley before serving.

Notes

  • Mix ricotta cheese with a splash of milk or cream for a creamier texture before layering.
  • Experiment with goat cheese or fontina for a unique flavor profile.
  • Sprinkle red pepper flakes on top before baking for a kick of heat.
