Ingredients
- 1 cup dates, pitted
- 1/2 cup nuts (e.g., walnuts, almonds, or pecans)
- 2 tbsp ground flaxseed
- 1/4 cup shredded unsweetened coconut
- 1 tsp vanilla extract
Instructions
- In a food processor, add all ingredients and pulse for 60 seconds until the mixture is sticky enough to form into balls.
- Roll the mixture into approximately 10 balls.
- Enjoy immediately, or refrigerate for up to 5 days.
Notes
You can customize the energy balls by experimenting with different nuts or adding spices like cinnamon or cacao powder. For a sweeter snack, increase the amount of dates or add honey.
