  • 1/2 cup applesauce
  • 2 medium-size ripe bananas (mashed; about 1 cup)

  • 1 tsp vanilla extract
  • 3/4 cup quick oats (gluten-free)
  • 1 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 cup white whole wheat flour (or 1:1 gluten-free flour)
  • 1 cup grated carrots (2 medium-sized, moisture removed)


Instructions

  1. Prepare your grated carrots, ensuring to remove excess moisture.
  2. Preheat your oven to 350°F and lightly grease your bread pan.
  3. In a large mixing bowl, add the egg, applesauce, mashed bananas, maple syrup, and vanilla extract. Whisk together until smooth.
  4. Stir in the quick oats, baking soda, ground cinnamon, ground ginger, and ground nutmeg, mixing until combined.
  5. Gently fold in the white whole wheat flour until just incorporated.
  6. Incorporate the grated carrots evenly throughout the batter.
  7. Pour the mixture into your prepared loaf pan, smoothing it out evenly.
