- 1 teaspoon (5 ml) ground coriander (5 grams)
- 1/2 teaspoon (3 ml) chili powder (optional) (1 gram)
- 1 cup (240 ml) coconut milk (240 milliliters)
- 1/2 cup (120 ml) creamy almond butter (120 grams)
- 2 tablespoons (30 ml) soy sauce (30 milliliters)
- 1 tablespoon (15 ml) brown sugar (12 grams)
- 1 tablespoon (15 ml) lime juice (15 milliliters)
- 1 tablespoon (15 ml) vegetable oil (15 milliliters)
- Salt to taste
- Pepper to taste
- Fresh cilantro, chopped, for garnish
- Cooked rice for serving
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the chopped onion and cook until softened, about 3-4 minutes.
- Stir in the minced garlic and cook for another 1 minute.
- Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon.
- Drain any excess fat from the skillet if necessary.
- Stir in the curry powder, ground cumin, ground coriander, and cayenne pepper.
- Cook the spices with the beef for 1-2 minutes until fragrant.
- Pour in the coconut milk and stir to combine.
- Add the peanut butter, soy sauce, and brown sugar to the skillet.
- Stir the mixture until the peanut butter is fully incorporated.
- Bring the sauce to a gentle simmer and cook for 5-7 minutes.
- Stir in the lime juice and season with salt and pepper to taste.
- Remove from heat and garnish with chopped fresh cilantro.
- Serve the curried ground beef with cooked rice.
