Ingredients
- 1 large cucumber
- 1 cup (240 ml) cottage cheese
- 4 large whole wheat tortillas
- 1/2 cup (75 g) shredded carrots
- 1/2 cup (75 g) chopped bell peppers
- 1/4 cup (15 g) chopped fresh spinach
- 1/4 teaspoon (1.5 g) salt
- 1/4 teaspoon (0.5 g) black pepper
Instructions
- Wash and dry the cucumber, bell peppers, and spinach.
- Slice the cucumber into thin strips.
- In a bowl, combine cottage cheese, salt, and black pepper.
- Stir in the shredded carrots, chopped bell peppers, and chopped spinach.
- Lay a tortilla flat on a clean surface.
- Spread 1/4 of the cottage cheese mixture evenly over the tortilla.
- Place cucumber strips on top of the cheese mixture.
- Roll the tortilla tightly around the filling.
- Repeat with the remaining tortillas and filling.
- Cut each wrap in half for serving.
