Ingredients

  • 1 large cucumber
  • 1 cup (240 ml) cottage cheese
  • 4 large whole wheat tortillas
  • 1/2 cup (75 g) shredded carrots
  • 1/2 cup (75 g) chopped bell peppers
  • 1/4 cup (15 g) chopped fresh spinach
  • 1/4 teaspoon (1.5 g) salt
  • 1/4 teaspoon (0.5 g) black pepper


Instructions

  1. Wash and dry the cucumber, bell peppers, and spinach.
  2. Slice the cucumber into thin strips.
  3. In a bowl, combine cottage cheese, salt, and black pepper.
  4. Stir in the shredded carrots, chopped bell peppers, and chopped spinach.
  5. Lay a tortilla flat on a clean surface.
  6. Spread 1/4 of the cottage cheese mixture evenly over the tortilla.
  7. Place cucumber strips on top of the cheese mixture.
  8. Roll the tortilla tightly around the filling.
  9. Repeat with the remaining tortillas and filling.
