A comforting and convenient taco casserole that combines seasoned ground beef, black beans, corn, and tomatoes, topped with melted cheese.
Ingredients
- 1 lb ground beef
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 2 cups shredded cheese
- Tortilla chips
- Sour cream and green onions for optional topping
Instructions
- In a skillet, brown the ground beef over medium heat. Drain excess fat.
- In a crockpot, layer the ground beef, black beans, corn, diced tomatoes, and taco seasoning. Stir to combine.
- Cook on low for 4-6 hours.
- About 30 minutes before serving, sprinkle shredded cheese on top and cover to melt.
- Serve with tortilla chips and top with sour cream and green onions if desired.

Feel free to add extras like diced bell peppers or jalapeños for extra flavor.
