Description

A comforting and convenient taco casserole that combines seasoned ground beef, black beans, corn, and tomatoes, topped with melted cheese.


Ingredients

  • 1 lb ground beef
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups shredded cheese
  • Tortilla chips
  • Sour cream and green onions for optional topping


Instructions

  1. In a skillet, brown the ground beef over medium heat. Drain excess fat.
  2. In a crockpot, layer the ground beef, black beans, corn, diced tomatoes, and taco seasoning. Stir to combine.
  3. Cook on low for 4-6 hours.
  4. About 30 minutes before serving, sprinkle shredded cheese on top and cover to melt.
  5. Serve with tortilla chips and top with sour cream and green onions if desired.

Notes

Feel free to add extras like diced bell peppers or jalapeños for extra flavor.
