Description

Crockpot chicken taco meat is a simple, flavorful dish perfect for busy days, offering a versatile base for tacos, burrito bowls, or salads.


Ingredients

  • 3 lbs boneless, skinless chicken breast
  • 4 Tbsp homemade taco seasoning
  • 1 cup low-sodium chicken broth (or water)


Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Top the chicken with taco seasoning, ensuring even coating.
  3. Pour the chicken broth over the mixture.
  4. Close the lid and cook on high for 3-4 hours or low for 6-8 hours.
  5. Once cooked, remove the chicken breast and place it in a large bowl.
  6. Shred the chicken using two forks or a stand-mixer.
  7. Stir the reserved crockpot juices and mix in 1/2 cup into the shredded chicken.

Notes

Avoid lifting the lid during cooking to keep the heat locked in. You can double the recipe for larger gatherings.
