Ingredients

  • – 1 (907g) bag frozen diced potatoes
  • – 1 medium onion, diced
  • – 1 cup (240ml) Greek yogurt
  • – 1 (298g) can cream of mushroom soup
  • – 1/2 tsp (3 ml) garlic powder
  • – 1/2 tsp (3 ml) onion powder
  • – Salt and pepper
  • – 4 Tbs (57g) vegetable oil, melted
  • – 2 1/2 cups (250g) shredded mozzarella cheese

Instructions

  1. In the slow cooker, combine the diced potatoes, chopped onion, Greek yogurt, cream of mushroom soup, garlic powder, onion powder, salt, pepper, melted vegetable oil, and 1 1/2 cups of shredded mozzarella cheese.
  2. Secure the lid and let it cook on the low setting for 4 hours.
  3. Afterward, take off the lid, distribute the remaining cup of mozzarella cheese on top, and replace the cover for approximately 15 minutes, allowing the cheese to melt.

Notes

  • Consider using a variety of shredded cheeses like cheddar or parmesan alongside mozzarella for enhanced flavor.
  • Add cooked and crumbled bacon or diced ham to boost the dish’s filling factor before cooking.
  • Customize the taste by trying different seasonings such as paprika, Italian seasoning, or red pepper flakes.
