Description

Crock Pot French Onion Meatballs feature juicy meatballs simmered in a rich broth of caramelized onions, beef, and thyme, ideal for heartwarming dinners.


Ingredients

  • 1 lb lean ground beef
  • 1/2 cup plain breadcrumbs
  • 3 cloves garlic, minced
  • 2 large sweet yellow onions, thinly sliced
  • 2 large eggs
  • 1 cup low-sodium beef broth
  • 1 tbsp soy sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste


Instructions

  1. Combine the ground beef, breadcrumbs, minced garlic, eggs, salt, and pepper in a large bowl until well mixed.
  2. Roll the mixture into one-inch meatballs and place them on a parchment-lined baking sheet.
  3. Caramelize sliced onions in a skillet over medium heat in butter or oil for about 15–20 minutes until golden brown.
  4. Mix the caramelized onions with beef broth, soy sauce, dried thyme, and remaining onion bits in the slow cooker.
  5. Add the meatballs to the slow cooker, ensuring they are submerged in the sauce.
  6. Cover and cook on low for 360 minutes (6 hours) or high for 180 minutes (3 hours).

Notes

For best results, allow the onions to caramelize slowly. Adjust seasoning and moisture to your preference prior to serving.
