Ingredients

  • For the Zucchini Fritters:
  • 2 medium zucchinis
  • 1 teaspoon (5 ml) salt
  • 2 large eggs
  • 1/2 cup (120 ml) all-purpose flour (60 grams)
  • 1/4 cup (60 ml) grated Parmesan cheese (25 grams)
  • 2 green onions, finely chopped
  • 1 tablespoon (15 ml) chopped fresh dill
  • 1/2 teaspoon (3 ml) garlic powder
  • 1/4 teaspoon (1 ml) black pepper
  • Olive oil for frying
  • For the Herb Yogurt Sauce:
  • 1 cup (240 ml) plain Greek yogurt (240 grams)
  • 1 tablespoon (15 ml) lemon juice
  • 1 tablespoon (15 ml) chopped fresh dill
  • 1 tablespoon (15 ml) chopped fresh parsley
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Grate the zucchinis using a box grater.
  2. Place the grated zucchini in a colander and sprinkle with 1 teaspoon of salt.
  3. Let the zucchini sit for 10 minutes to draw out excess moisture.
  4. Use a clean kitchen towel to squeeze out as much liquid as possible from the zucchini.
  5. In a large bowl, beat the eggs.
  6. Add the squeezed zucchini, flour, Parmesan cheese, green onions, fresh dill, garlic powder, and black pepper to the bowl with the eggs.
  7. Mix until well combined.
  8. Heat a layer of olive oil in a large skillet over medium-high heat.
  9. Drop spoonfuls of the zucchini mixture into the skillet, flattening them slightly.
  10. Fry the fritters for 3-4 minutes on each side, or until golden brown and crispy.
  11. Remove the fritters from the skillet and drain on paper towels.
  12. In a separate bowl, combine the Greek yogurt, lemon juice, fresh dill, fresh parsley, minced garlic, salt, and pepper.
  13. Stir until the herb yogurt sauce is smooth and well mixed.
  14. Serve the crispy zucchini fritters warm with the herb yogurt sauce on the side.

Notes

  • Thoroughly squeeze excess moisture from grated zucchini to prevent fritters from becoming soggy.
  • Adjust lemon juice, garlic, or herbs in the yogurt sauce to match your taste preferences.
  • Opt for baking the fritters in the oven for a healthier alternative to frying in oil.
