Ingredients
- For the Zucchini Fritters:
- 2 medium zucchinis
- 1 teaspoon (5 ml) salt
- 2 large eggs
- 1/2 cup (120 ml) all-purpose flour (60 grams)
- 1/4 cup (60 ml) grated Parmesan cheese (25 grams)
- 2 green onions, finely chopped
- 1 tablespoon (15 ml) chopped fresh dill
- 1/2 teaspoon (3 ml) garlic powder
- 1/4 teaspoon (1 ml) black pepper
- Olive oil for frying
- For the Herb Yogurt Sauce:
- 1 cup (240 ml) plain Greek yogurt (240 grams)
- 1 tablespoon (15 ml) lemon juice
- 1 tablespoon (15 ml) chopped fresh dill
- 1 tablespoon (15 ml) chopped fresh parsley
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Grate the zucchinis using a box grater.
- Place the grated zucchini in a colander and sprinkle with 1 teaspoon of salt.
- Let the zucchini sit for 10 minutes to draw out excess moisture.
- Use a clean kitchen towel to squeeze out as much liquid as possible from the zucchini.
- In a large bowl, beat the eggs.
- Add the squeezed zucchini, flour, Parmesan cheese, green onions, fresh dill, garlic powder, and black pepper to the bowl with the eggs.
- Mix until well combined.
- Heat a layer of olive oil in a large skillet over medium-high heat.
- Drop spoonfuls of the zucchini mixture into the skillet, flattening them slightly.
- Fry the fritters for 3-4 minutes on each side, or until golden brown and crispy.
- Remove the fritters from the skillet and drain on paper towels.
- In a separate bowl, combine the Greek yogurt, lemon juice, fresh dill, fresh parsley, minced garlic, salt, and pepper.
- Stir until the herb yogurt sauce is smooth and well mixed.
- Serve the crispy zucchini fritters warm with the herb yogurt sauce on the side.
