Description

Learn how to make the perfect crispy zucchini fritters with this easy recipe. Crispy on the outside, tender on the inside – a delicious snack or side dish!


Ingredients

  • – 500 g/1 lb zucchini (2 medium ~ 23cm/9″ long)
  • – 1 tsp (5 ml) salt
  • – 1 large egg
  • – 2 green onions, halved then finely sliced
  • – 1/4 cup (60 ml) grated cheese (fresh or store bought)
  • – 1 garlic clove, large, minced
  • – 1/2 cup / 75 g flour
  • – 1/2 tsp (3 ml) baking powder
  • – Pinch of pepper
  • – 4 tbsp (60 ml) vegetable oil, separated
  • – Yoghurt or sour cream
  • – More chopped green onions


Instructions

  1. Use a box grater to shred the zucchini, angling it to create lengthy strands.
  2. Place the shredded zucchini in a bowl, sprinkle with salt, and mix well. Let it sit for at least 10 minutes.
  3. With your hands or a tea towel, squeeze out any extra moisture, then return the zucchini to the bowl.
  4. Set your oven to 200F/100C to keep the fritters warm, and place a rack on a tray to maintain their crispiness.
  5. Into the zucchini bowl, add the egg, sliced green onions, grated cheese, and minced garlic, then stir to blend.
  6. Evenly sprinkle the flour and baking powder over the mixture, then season with a pinch of pepper. Stir until just combined, ensuring the batter remains thick and soft.
  7. Warm up 2 tablespoons of vegetable oil in a non-stick skillet over medium-high heat, or medium if your stove runs hot. Drop in 1/4 cup of batter into the skillet, using an ice cream scoop if available, forming 3 or 4 heaps.
  8. Gently press down with a spatula to make them about 1cm thick.
  9. Cook for 3 minutes until the bottom is a rich golden hue, adjusting the heat if necessary to prevent burning. Flip and cook the opposite side for another 3 minutes. Move to the tray in the oven to keep them warm.
  10. Repeat the process with the rest of the batter.
  11. Serve the fritters right away, topped with a spoonful of yoghurt or sour cream, and sprinkled with additional chopped green onions if you like.
