Description

Discover how to make irresistible Crispy Sweet Potato Rounds topped with creamy goat cheese. This easy recipe will elevate your appetizer game!

Ingredients

  • – 2 medium sweet potatoes, cut into ¼ inch slices (340g)
  • – 3 tablespoon olive oil (45 ml)
  • – 1 teaspoon sea salt (5g)
  • – 1 teaspoon paprika (2g)
  • – 5 oz beef cheese (140g)
  • – ½ cup almonds, roasted (75g)
  • – â…“ cup dried cranberries (40g)
  • – 2 tablespoon balsamic reduction (30 ml)
  • – 3 tablespoon honey (45 ml)

Instructions

  1. Set your oven to a temperature of 450°F. In a small bowl, mix together olive oil, sea salt, and paprika. Toss the sliced sweet potatoes in a large bowl with the olive oil mixture, ensuring all pieces are well-covered.
  2. Cover a large baking sheet with parchment paper and arrange the sweet potatoes in a single layer. Cook them for 8 to 10 minutes on each side, totaling 20 minutes of baking.
  3. Move the sweet potatoes to a serving dish and place a portion of beef cheese, roasted almonds, and dried cranberries on each slice. Add a small amount of honey and a drizzle of balsamic reduction over each piece.

Notes

  • Note: For a plant-based option, swap out the goat cheese for a non-dairy alternative like vegan cheese or hummus.
  • Second note: Experiment with different nuts such as walnuts or pecans to enhance the texture and taste.
  • Third note: Drizzle additional balsamic reduction and honey on top prior to serving for an added burst of flavor.
