Description

Delicious and crispy oven baked tacos filled with seasoned ground beef and cheese, perfect for family gatherings.


Ingredients

  • 1 lb. ground beef
  • 1 package taco seasoning
  • 1/2 cup refried beans
  • 8 corn tortillas
  • 2 tablespoons olive oil
  • 1 1/2 cups shredded cheddar or pepperjack cheese
  • Optional toppings: Sour cream, Salsa, Guacamole


Instructions

  1. Preheat your oven to 425 degrees.
  2. Cook the ground beef in a medium-sized skillet over medium heat until browned and drain excess grease.
  3. Add the taco seasoning and stir until combined.
  4. Mix in the refried beans until well combined, then remove from heat to cool.
  5. Coat both sides of each corn tortilla with olive oil and place them on a baking sheet.
  6. Bake in the preheated oven for 3 minutes to make them flexible.
  7. Divide the beef and bean mixture among the tortillas, sprinkle cheese on top, and fold each tortilla.
  8. Return to the oven and bake for 12 minutes. Flip and bake for another 10 minutes until golden and crispy.
  9. Serve immediately with your choice of toppings.

Notes

For a crispy finish, consider broiling the tacos for a couple of minutes after baking. Use parchment paper for easy cleanup.
