Ingredients

  • – 3 cups (720 ml) grated and squeezed zucchini
  • – 1 teaspoon (5 ml) salt
  • – 2 large eggs, whisked
  • – 2 garlic cloves, minced
  • – 1/2 teaspoon (3 ml) black pepper
  • – 1/2 teaspoon (3 ml) dried oregano
  • – 1/2 cup (60 g) oat flour
  • – 1/2 teaspoon (3 ml) baking powder
  • – 1/4 cup (30 g) crumbled cheese
  • – 2 – 3 tablespoon (38 ml) olive oil
  • – Use this recipe for easy tzatziki sauce.


Instructions

  1. Grate the zucchinis and put them into a big strainer or colander. Liberally sprinkle with salt (around ½ – 1 teaspoon) and let them rest for 10 minutes to help the extra liquid drain out. Afterward, use a clean dish towel or cheesecloth to thoroughly squeeze out any leftover moisture from the zucchini. This step is essential to avoid soggy fritters.
  2. In a large mixing bowl, combine the drained zucchini, oat flour, beaten eggs, minced garlic, crumbled cheese, ½ teaspoon salt, black pepper, and baking powder. Adjust the seasoning with more salt and pepper to your liking, if necessary.
  3. Warm 2 to 3 tablespoons of olive oil in a large nonstick skillet over medium-high heat.
  4. With a spoon, drop about 2 tablespoons of the mixture onto the preheated pan for each fritter. Use a spatula to gently flatten them into shape.
  5. Cook the fritters for roughly 2 minutes on each side, or until they become golden brown and crispy.
  6. Once done, move the fritters to a plate lined with paper towels to soak up any excess oil.
