Description

Ingredients

  • 1 pound lean ground beef (90%)
  • 1 packet of taco seasoning
  • ¾ cup red enchilada sauce
  • 2 ½ cups Oaxaca cheese or Mexican cheese or Monterey Jack
  • 10 corn tortillas
  • 1 tablespoon olive oil


Instructions

  1. Preheat your oven to 450°F.
  2. Heat a skillet over medium-high heat and add the ground beef, breaking it up as it cooks.
  3. Brown the meat until golden, then integrate the taco seasoning.
  4. Add the red enchilada sauce to the skillet and mix well.
  5. Wrap tortillas in a damp paper towel and microwave until warm.
  6. Brush one side of each tortilla with olive oil and place on a baking sheet oiled side down.
  7. Layer each tortilla with 2 tablespoons of cheese, followed by ¼ cup of the beef mixture, and finish with another 2 tablespoons of cheese.
  8. Fold the tortillas in half and bake in the oven for 16 minutes.
  9. Let the tacos cool for 3 minutes before serving.
