  • 1/2 cup (120 ml) breadcrumbs (60 grams)
  • 1/4 cup (60 ml) grated non-alcoholic cheese (25 grams)
  • 1/4 cup (60 ml) all-purpose flour (30 grams)
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 teaspoon (5 ml) dried oregano
  • 1/2 teaspoon (3 ml) salt
  • 1/4 teaspoon (1 ml) black pepper
  • 1/4 cup (60 ml) chopped fresh parsley (15 grams)
  • Vegetable oil for frying


Instructions

  1. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.
  2. In a large bowl, combine the squeezed zucchini, breadcrumbs, Parmesan cheese, and flour.
  3. Add the minced garlic, egg, dried oregano, salt, and black pepper to the bowl.
  4. Mix the ingredients until well combined.
  5. Stir in the chopped fresh parsley until evenly distributed.
  6. Shape the mixture into small balls, about 1 inch in diameter.
  7. Heat vegetable oil in a large skillet over medium heat.
