Ingredients
- 454 g cremini mushrooms, cleaned and stems trimmed
- 240 ml all-purpose flour
- 5 ml garlic powder
- 5 ml paprika
- 5 ml onion powder
- Salt and pepper to taste
- 2 large eggs
- 120 ml milk
- 120 g breadcrumbs (panko for extra crunch)
- Vegetable oil for frying
- 240 g Greek yogurt
- 60 g mayonnaise
- 15 ml dried parsley
- 15 ml dried dill
- 5 ml garlic powder
- 5 ml onion powder
- 5 ml dried chives
- 15 ml fresh lemon juice
- Salt and pepper to taste
Instructions
- Dry the washed mushrooms using paper towels. Combine the flour, garlic powder, paprika, onion powder, salt, and pepper in a shallow bowl.
- In a separate shallow bowl, beat the eggs and mix them with the milk. Place the breadcrumbs in another shallow bowl.
- Dredge each mushroom in the flour mixture, shaking off any surplus. Submerge the floured mushroom in the egg mixture, then cover it with breadcrumbs, pressing lightly to ensure they stick. Do this with all the mushrooms.
- Pour enough vegetable oil into a deep frying pan or pot to reach a depth of about 1 inch and heat it to 350°F (175°C). Cook the coated mushrooms in groups, ensuring the pan is not overcrowded. Fry them for 3-4 minutes until they become golden and crisp. Take them out and let them drain on paper towels.
- In a small mixing bowl, combine the Greek yogurt, mayonnaise, dried parsley, dried dill, garlic powder, onion powder, dried chives, lemon juice, salt, and pepper. Mix thoroughly and adjust the seasoning to your preference.
