Instructions
- In a large bowl, mix together flour, cornstarch, baking powder, salt, and pepper.
- In a separate bowl, whisk to combine the buttermilk and eggs.
- Dip each chicken breast into the buttermilk mixture, ensuring full coverage.
- Coat the chicken in the flour mixture, pressing gently onto the chicken.
- Heat oil in a deep skillet over medium-high heat.
- Fry the chicken breasts in hot oil until golden brown, about 6-8 minutes per side, or until cooked through.
- Prepare the waffles according to package instructions or your chosen recipe.
- For the hot honey, mix honey with a splash of hot sauce.
- Serve the fried chicken on top of the waffles, drizzle with hot honey, and add a pat of butter if desired.
Notes
For crispier chicken, increase cornstarch in the flour mixture. Let the chicken rest after frying to retain juiciness.
