Description
Crispy coconut rice blends the creamy flavor of coconut milk with a delightful balance of soft and crispy textures, perfect as a main or side dish.
Ingredients
- 2 cups jasmine rice
- 1 can (13.5 oz) coconut milk
- 1 cup water
- Salt to taste
- Vegetable oil for frying
- 3 green onions, chopped (for garnish)
Instructions
- Rinse the jasmine rice under cold water until the water runs clear. Drain well.
- In a pot, combine the rice, coconut milk, water, and salt. Bring to a boil, then reduce heat, cover, and simmer for 15–20 minutes until the rice is cooked.
- Allow the rice to cool and firm up, preferably in the refrigerator.
- Once cooled, heat vegetable oil in a skillet over medium heat.
- Spoon the rice into the skillet and flatten it with a spatula.
- Cook until the bottom is golden and crispy, about 5–7 minutes.
- Carefully flip the rice and cook the other side until golden brown.
- Once cooked, sprinkle with chopped scallions and serve as a main or side dish.
Notes
For added flavor, infuse the coconut milk with spices or add chili flakes for heat. Cooling the rice helps achieve a crispy texture.
