- 2 cups shredded zucchini (480 ml)
- 1 teaspoon (5 ml) salt, divided
- 2 large eggs, lightly beaten
- 1/4 cup grated onion (60 g)
- 1/2 cup shredded beef cheese (60 g)
- 1/2 cup panko bread crumbs (60 g)
- 1/2 teaspoon (3 ml) pepper
- 1/2 teaspoon (3 ml) garlic powder
- 1/2 teaspoon (3 ml) Italian seasoning
Instructions
- Set your oven to 400°F to preheat. Combine the shredded zucchini with 1/2 teaspoon of salt in a large mixing bowl, and leave it to rest for 10 minutes. Transfer the zucchini onto a clean dish towel and press out the extra moisture, discarding the liquid.
- In another large bowl, mix together the eggs, grated onion, shredded cheese, bread crumbs, the remaining 1/2 teaspoon of salt, pepper, garlic powder, and Italian seasoning.
- Gently stir the drained zucchini into the egg mixture in the bowl.
- Take tablespoon-sized portions of the zucchini blend and shape them into 1-inch long cylinders. Arrange these on a baking sheet lined with parchment paper, ensuring they are spaced about an inch apart. Bake in the oven for 15 to 18 minutes, or until the edges turn a golden hue.
