Ingredients

  • – 2-3 zucchini (480-720g, sliced)
  • – 1 tablespoon (15 ml) olive oil
  • – 1/2 teaspoon (3 ml) pepper
  • – 1/2 teaspoon (3 ml) salt
  • – 1 cup (240 ml) shredded cheese (such as cheddar or mozzarella)


Instructions

  1. Set your oven to 450°F to warm up.
  2. Cut the zucchini into slices roughly ¼ inch in thickness.
  3. Pour olive oil over the zucchini slices, ensuring they are well coated by tossing them.
  4. Lay the zucchini slices out on a baking tray, ensuring they do not overlap.
  5. Dust the slices with salt and pepper.
  6. Scatter the shredded cheese over the zucchini.
  7. Place the tray in the middle of the oven and bake for around 10 minutes or until the zucchini becomes soft.
