Ingredients
- – 2-3 zucchini (480-720g, sliced)
- – 1 tablespoon (15 ml) olive oil
- – 1/2 teaspoon (3 ml) pepper
- – 1/2 teaspoon (3 ml) salt
- – 1 cup (240 ml) shredded cheese (such as cheddar or mozzarella)
Instructions
- Set your oven to 450°F to warm up.
- Cut the zucchini into slices roughly ¼ inch in thickness.
- Pour olive oil over the zucchini slices, ensuring they are well coated by tossing them.
- Lay the zucchini slices out on a baking tray, ensuring they do not overlap.
- Dust the slices with salt and pepper.
- Scatter the shredded cheese over the zucchini.
- Place the tray in the middle of the oven and bake for around 10 minutes or until the zucchini becomes soft.
- To brown the cheese, change the oven setting to broil and broil for 1-2 minutes, keeping a close eye until the cheese turns golden.
