Ingredients
- 2 medium zucchinis, sliced into 1/4-inch rounds
- 2 tbsp olive oil
- 1/2 cup freshly grated parmesan cheese
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning
- 1/4 tsp sea salt
- 1/4 tsp black pepper
- Chopped parsley or lemon zest for garnish
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Slice the zucchini into even rounds.
- In a mixing bowl, toss the zucchini slices with olive oil, parmesan cheese, garlic powder, salt, black pepper, and Italian seasoning until evenly coated.
- Arrange the zucchini in a single layer on the baking sheet, ensuring that the slices are not overlapping.
- Bake for 18–20 minutes until they turn golden and slightly crisp on the edges.
- Serve warm with extra parmesan, if desired.
Notes
For maximum crunch, avoid overcrowding the baking sheet. Experiment with the thickness of your zucchini slices for different textures.
