Description

A delicious and healthy dish featuring zucchini baked to crispy perfection with parmesan and Italian seasonings.


Ingredients

  • 2 medium zucchinis, sliced into 1/4-inch rounds
  • 2 tbsp olive oil
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • Chopped parsley or lemon zest for garnish


Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice the zucchini into even rounds.
  3. In a mixing bowl, toss the zucchini slices with olive oil, parmesan cheese, garlic powder, salt, black pepper, and Italian seasoning until evenly coated.
  4. Arrange the zucchini in a single layer on the baking sheet, ensuring that the slices are not overlapping.
  5. Bake for 18–20 minutes until they turn golden and slightly crisp on the edges.
  6. Serve warm with extra parmesan, if desired.

Notes
