Ingredients
- – 3 medium zucchinis (about 600g)
- – 2 egg whites mixed with 1 teaspoon (5 ml) Cajun seasoning
- – 1 cup (100g) shredded cheese mixed with 1 tablespoon Cajun seasoning
- – 1/2 cup (120ml) yogurt
- – 2 tablespoons (30ml) coconut cream
- – 2 tablespoons (30ml) lime juice
- – 1 tablespoon (15 ml) Cajun seasoning
- – 2 egg yolks, beaten
Instructions
- Slice the zucchinis into slender strips resembling fries.
- Let the zucchini strips sit for 15 minutes to dry, or gently dab them with paper towels to absorb excess moisture.
- Preheat your oven to 425°F and prepare a baking tray with parchment paper.
- Combine the egg whites and Cajun seasoning in a shallow dish.
- In a separate shallow dish, mix together the shredded cheese and Cajun seasoning.
- Coat each zucchini strip in the egg white mixture, followed by the cheese mixture.
- Place them on the baking tray in a single layer and bake for approximately 30 minutes, turning them over halfway through.
- Warm the yogurt, coconut cream, lime juice, and Cajun seasoning in a pan over medium heat.
- After warming, take the mixture off the heat.
- Gradually add the egg yolks, one teaspoon at a time, stirring quickly to fully blend them in.
- Serve alongside the crispy baked zucchini fries.
