Ingredients

  • – 3 medium zucchinis (about 600g)
  • – 2 egg whites mixed with 1 teaspoon (5 ml) Cajun seasoning
  • – 1 cup (100g) shredded cheese mixed with 1 tablespoon Cajun seasoning
  • – 1/2 cup (120ml) yogurt
  • – 2 tablespoons (30ml) coconut cream
  • – 2 tablespoons (30ml) lime juice
  • – 1 tablespoon (15 ml) Cajun seasoning
  • – 2 egg yolks, beaten


Instructions

  1. Slice the zucchinis into slender strips resembling fries.
  2. Let the zucchini strips sit for 15 minutes to dry, or gently dab them with paper towels to absorb excess moisture.
  3. Preheat your oven to 425°F and prepare a baking tray with parchment paper.
  4. Combine the egg whites and Cajun seasoning in a shallow dish.
  5. In a separate shallow dish, mix together the shredded cheese and Cajun seasoning.
  6. Coat each zucchini strip in the egg white mixture, followed by the cheese mixture.
  7. Place them on the baking tray in a single layer and bake for approximately 30 minutes, turning them over halfway through.
  8. Warm the yogurt, coconut cream, lime juice, and Cajun seasoning in a pan over medium heat.
  9. After warming, take the mixture off the heat.
  10. Gradually add the egg yolks, one teaspoon at a time, stirring quickly to fully blend them in.
  11. Serve alongside the crispy baked zucchini fries.
