Ingredients
- 1 large cauliflower (about 900g)
- 1 1/4 cups panko (150g)
- 1 large clove garlic, minced
- 5 tbsp olive oil (75 ml)
- 1 tsp (5 ml) Italian herb blend seasoning
- 3/4 tsp (4 ml) paprika
- 3/4 tsp (4 ml) onion powder
- Salt and pepper to taste
- 1/2 cup (120 ml) grated cheese (such as cheddar or mozzarella)
- 3 eggs, lightly beaten
- 1/2 cup (120 ml) tapioca starch (or corn starch or flour)

Instructions
- Set your oven to preheat at 400°F.
- Fill a large pot with water, add salt, and bring it to a boil. Cut the cauliflower into medium-sized pieces that aren’t too small or too large. Place them in the pot, cover, and let them cook for five minutes. Drain the water and let the cauliflower cool until you can handle it comfortably.
- Prepare three shallow containers: one with the beaten eggs, another with the tapioca starch, and in the third, combine the panko, minced garlic, olive oil, Italian herb blend, paprika, onion powder, salt, pepper, and grated cheese.
- Coat each cauliflower piece in the starch first, then dip it into the egg mixture, and finally press it into the panko mixture so it sticks well. Arrange them on a baking sheet and bake in the oven for 15 to 20 minutes, or until they turn golden brown.
