Ingredients

  • cinnamon, I used about 1/2 teaspoon (3 ml) for a “light” cinnamon taste
  • 2 carrots, shaved into peels using a vegetable peeler
  • 1/2 tablespoon (8 ml) melted coconut oil
  • Pinch of kosher salt
  • 1/2 teaspoon (3 ml) ground pepper
  • 1/4-1/2 teaspoon (3 ml) cayenne pepper, depending on heat preference


Instructions

  1. Heat your oven to 425°F and prepare a baking tray by covering it with parchment paper.
  2. In a medium-sized bowl, mix together the thinly sliced or peeled carrots with the melted coconut oil and seasonings.
  3. Spread the carrot mixture evenly on the prepared baking tray in a single layer.
  4. Place in the oven and bake for 10-12 minutes, keeping a close eye on them to prevent burning as they cook quickly.
  5. Take out of the oven and enjoy immediately.
