Description

A versatile crepe batter recipe perfect for both sweet and savory dishes, allowing for endless filling possibilities.


Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup sparkling water
  • 2 tbsp melted butter (plus extra for cooking)
  • 1/4 tsp salt
  • 1 tsp vanilla extract (optional, for sweet crepes)
  • 1 tbsp sugar (optional, for sweet crepes)


Instructions

  1. In a blender or mixing bowl, add the eggs, milk, sparkling water, melted butter, and salt. Add vanilla extract and sugar if making sweet crepes.
  2. Blend or whisk the mixture until smooth. Gradually add the flour, ensuring no lumps remain.
  3. Let the batter rest for about 30 minutes if time allows.
  4. Heat a non-stick pan over medium heat and lightly coat with butter.
  5. Pour approximately 1/4 cup of batter into the pan, swirling it to create a thin layer.
  6. Cook for 1–2 minutes until edges lift and bottom is light brown.
  7. Carefully flip the crepe and cook for another 30 seconds.
  8. Repeat with the remaining batter, adding butter to the pan as needed.

Notes

Letting the batter rest can create thinner and more delicate crepes. Adjust cooking times as needed based on stove heat.
