Ingredients
- 1 medium spaghetti squash (about 1.4 kg)
- 1 cup (240 ml) (113 grams) shredded mozzarella cheese
- 1/2 cup (120 ml) (57 grams) grated Parmesan cheese
- 1/2 cup (120 ml) (60 grams) all-purpose flour
- 1/4 cup (60 ml) (60 milliliters) sour cream
- 2 large eggs
- 1 teaspoon (5 ml) garlic powder
- 1 teaspoon (5 ml) onion powder
- 1/2 teaspoon (3 ml) salt
- 1/4 teaspoon (1 ml) black pepper
- 1 tablespoon (15 ml) (15 milliliters) olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and remove the seeds.
- Place the squash halves cut-side down on a baking sheet.
- Bake for 40 to 45 minutes, until the squash is tender.
- Let the squash cool slightly, then use a fork to scrape out the strands.
- Transfer the squash strands to a large mixing bowl.
- Add shredded mozzarella and grated Parmesan to the bowl.
- Stir in all-purpose flour and sour cream.
- Crack the eggs into the bowl and mix well.
- Add garlic powder, onion powder, salt, and black pepper.
- Mix until all ingredients are well combined.
- Shape the mixture into small tot-sized balls.
- Heat olive oil in a skillet over medium heat.
- Place the tots in the skillet, cooking in batches if necessary.
- Fry the tots for 3-4 minutes on each side until golden brown.
- Remove the tots from the skillet and drain on paper towels.
- Serve warm.
