Ingredients
- 2 pounds (about 900g) chicken thighs or breasts
- 2 tablespoons (30ml) olive oil
- 1 teaspoon (5g) salt
- 1/2 teaspoon (2g) ground black pepper
- 1 teaspoon (2g) paprika
- 1 teaspoon (2g) garlic powder
- 1 cup (240ml) chicken broth
- 1 cup (240ml) coconut cream
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup (200g) long-grain white rice
- 2 cups (480ml) water
- 1 cup (150g) frozen peas
- 1/4 cup (15g) chopped fresh parsley
Instructions
- Season the chicken with salt, pepper, paprika, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken to the skillet and brown on both sides, about 5 minutes per side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until softened, about 3 minutes.
- Stir in the minced garlic and cook for an additional 1 minute.
- Add the rice to the skillet and stir well to coat with the onion and garlic mixture.
- Pour in the chicken broth and water, and bring to a simmer.
- Return the chicken to the skillet, placing it on top of the rice.
- Cover the skillet and reduce heat to low, cooking for 20 minutes.
- Remove the cover and stir in the heavy cream and frozen peas.
- Cover again and cook for an additional 10 minutes, until the rice is tender and the chicken is cooked through.
- Remove from heat and let it sit, covered, for 5 minutes.
- Garnish with chopped fresh parsley before serving.
