Ingredients

  • 2 pounds (about 900g) chicken thighs or breasts
  • 2 tablespoons (30ml) olive oil
  • 1 teaspoon (5g) salt
  • 1/2 teaspoon (2g) ground black pepper
  • 1 teaspoon (2g) paprika
  • 1 teaspoon (2g) garlic powder
  • 1 cup (240ml) chicken broth
  • 1 cup (240ml) coconut cream
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup (200g) long-grain white rice
  • 2 cups (480ml) water
  • 1 cup (150g) frozen peas
  • 1/4 cup (15g) chopped fresh parsley


Instructions

  1. Season the chicken with salt, pepper, paprika, and garlic powder.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the chicken to the skillet and brown on both sides, about 5 minutes per side.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the chopped onion and cook until softened, about 3 minutes.
  6. Stir in the minced garlic and cook for an additional 1 minute.
  7. Add the rice to the skillet and stir well to coat with the onion and garlic mixture.
  8. Pour in the chicken broth and water, and bring to a simmer.
  9. Return the chicken to the skillet, placing it on top of the rice.
  10. Cover the skillet and reduce heat to low, cooking for 20 minutes.
  11. Remove the cover and stir in the heavy cream and frozen peas.
  12. Cover again and cook for an additional 10 minutes, until the rice is tender and the chicken is cooked through.
  13. Remove from heat and let it sit, covered, for 5 minutes.
  14. Garnish with chopped fresh parsley before serving.
