Ingredients

  • 4 cup (960 ml) s chicken broth
  • 1/2 teaspoon (3 ml) salt
  • 1 cup (240 ml) regular grits
  • 1 cup (240 ml) shredded sharp cheddar cheese, divided (4 ounce (113 g) s)
  • 1 cup (240 ml) shredded monterey jack pepper cheese (4 ounce (113 g) s)
  • 2 tablespoon (30 ml) s vegetable oil
  • 6 green onions, chopped
  • 1 green bell pepper, chopped
  • 1 garlic clove, minced
  • 1 lb (454 g) fresh small shrimp, peeled and cooked
  • 1 (10 ounce (283 g)) can diced tomatoes and green chilies, drained
  • 1/4 teaspoon (1 ml) salt
  • 1/4 teaspoon (1 ml) pepper


Instructions

  1. In a large pot, bring the chicken broth and salt to a boil; add the grits while stirring.
  2. Cover the pot, lower the heat, and let it cook gently for 20 minutes.
  3. Combine the cooked grits, 3/4 cup of the Cheddar, and all of the Monterey Jack cheese.
  4. In a large pan, heat the vegetable oil over medium heat; add the green onions, bell pepper, and garlic, cooking for 5 minutes until softened.
  5. Mix together the sautéed vegetables, grits mixture, shrimp, and the next three ingredients.
  6. Transfer the mixture into a greased 2-quart baking dish.
  7. Top with the remaining 1/4 cup of Cheddar cheese.
  8. Place in the oven and bake at 350°F for 30 to 45 minutes.
